various and sundry

- Today I attempted basic fried rice. However, I am terrible at making rice. It turned into mush. Woe. The Iron Chefs would point and laugh if they ever saw. Sigh and woe.

- Voting is open for this week's LJ Idol. I struggled with this damned topic all week and ended up writing very literally about a blanket. I have the sinking feeling it won't cut it and I'll be eliminated this week.

- Despite my total rice failure, I made myself delicious salmon for lunch. It was marinated in key lime juice and grapefruit with a little salt.. Nom nom nom.

- Windy, all day long.

I love fried rice! The key is make sure the rice is nice and cold before you fry it up. You might have already known that but it took me a few tries to figure it out.. good luck!

I have a microwave rice cooker... it is brainless, aside from the need to only cook it half the time, then stir so as not to boil over, then cook for the rest of the time. Fried rice to be made with leftovers the next day (though I've never perfected it either... I'd rather get fried rice from Din Ho).

I'm making paella tonight to use up leftover sausages... rice, chicken stock, a jar of Pace, and meaty chunks in a skillet, clap a lid on it till it's done. The salsa version is actually better than a chop-your-own-veggies version.

Love the leftover rice!! Leftover rice is of the good!!

If you don't want to bother making it yourself (I usually don't), if I go to a Chinese / Mexican restaurant I order an extra side of rice to take home and then fry it up the next day with lots of goodness. MMmmmm, goodness.

Of course, out here I don't really have a problem finding decent fried rice, lol.

How did you try to make fried rice? What did you use? My sister and I kind of made our own recipe and it works rather well, we think.

I had cold cooked rice from the previous night. I fried some green onions in a bit of oil, and then tossed in the rice. I used five spice powder, some ginger, some ground clove, some pepper and a couple dashes of soy sauce. I even scrambled an egg on the side. I think it failed because my initial cooking of the rice the day before was not up to par - too mushy.
