Oct. 24th, 2009 11:34 amI made a decent cup of coffee, aided by the advice of Alton Brown on ratios and water temperature. Perhaps I have broken my streak of bad luck. However a decent cup of coffee makes me want a cigarette. Sigh.
When I woke up, the stock was half reduced and ready for straining. I give thanks to whomever invented the sieves with little metal bits to grip the sides of the bowl. I am not an especial fan of carrots, so I use zucchinis in my stock. Yes, they get a bit mushy. But it adds a nice, not too sweet vegetable note.
My beets were chopped and roasted, and my stock is resting. I've decided to do things a little differently this time and make a large amount of mashed potatoes. This way, one can serve the borscht on top of the mashed potatoes and blend as liked. This is also less time consuming than making bread. Despite having a decent amount of counter space, it is still not enough.
This time I have to remember to saute the cabbage first before I dump it in the soup. Remember!
The Roomba is vacuuming so I don't have to - grand. I love my robot friends.
I realized I have not made a dessert. Perhaps a quick chocolate ganache, like the Voltaggio one on Top Chef. With some of the Haagen Daaz five ingredient mint ice cream. Though sadly that is not spearmint. There really needs to be more spearmint in things.
Perhaps I should go check on my potatoes....
