I first made this pie with strawberry instead of raspberry for Joan and Edward. I think you could probably substitute most any berry or fruit that goes well with chocolate into this recipe.



1 lb semi-sweet chocolate
2 cups whipping cream
3/4 cup raspberry jam

Use a baked pastry crust, or a cookie one if your prefer. I like it with a flaky crust personally.

In a large sauce pan, mix two cups heavy or whipping cream with 3/4 cup raspberry jam. Whisk until jam is melted and cream begins to boil. Remove from heat and add 1lb semisweet chocolate. Whisk until melted and smooth. Place chocolate cream mixture in fridge for about 1 hour and 15 minutes, pulling out to whisk from time to time. Then pour into pie shell and decorate with fresh raspberries.


In other news, I really should be doing the laundry or finding business casual clothes to wear to work. Instead I would like to hurt my neighbors for playing lame bass-heavy music and come home to a magically clean apartment. I would also like the repair men to come back and fix the giant hole in my ceiling. It's not leaking, but I won't feel better til it's done.

It's so lame. Clients visit every now and then, though they are ALWAYS gone before we get there. So why torment us? Bleah.

It's definitely delicious, and it sets up very nicely. I highly recommend it!
