Had a similar experience some years back with canned salmon as well. Turned me off for good. And weeks later, something kicked in and said -- "Hey! Remember that canned salmon from the other night? Wellsir, look at that sardine yer eating!" If it makes you feel any better, I burn everything I attempt baking. Or I put it on the rack too soon. Or too late. Baking is the subtlest of culinary arts, methinks, and probably the most difficult to do.
