Alan spent more than five hours cooking today, producing the onion soup and beef croquettes. My husband is sometimes a little mad. Who else would put a beautiful prime ribe eye steak in the food processor with bread crumbs and make a giant meatball? He portioned it out into croquettes, which were served with a garlic dill aoili. (Homemade aoili at that.)
It's amazing how much good the soup is with carmelized onions and some cognac. All this rich food only makes me want to go back to sleep. So so so incredibly good. I married well, that's for damn sure.
Now some delicious port, and bed time.

As for the croquettes, he just trimmed a rib eye steak, and then chopped the meat before throwing it in the food processor. Then he mixed with with bread crumbs, and some herbs. It sat in the fridge for awhile as the soup finished, and then he just threw them in the pan with some olive oil. Fried them quickly, not unlike crab cakes.
