It is comforting to know my knife skills aren't really so bad, but somewhat a product of dull or incorrect weapons. My onions were not beautifully diced but they were better than usual. I tried to remember all the things I've heard Anthony Bourdain and Tyler say about chopping things. My hour in the kitchen this morning has yielded an enormous bowl of chopped vegetables for a gazpacho of epic deliciousness. (Though I forgot radishes, alas)

Victoriknox (sp?) serrated knives are wonderful for little slicy bits. They are so sharp that I gave myself quite a few nicks and cuts the first few weeks I had them (until I remembered to keep my damn fingertips out of the way). I'd be making sweet potato fries and oops, that's not vegan anymore...
