my two day project

I present the results of two days of work, the coconut cake. It is made with the finest flour, eggs and sugar. The coconut was harvested fresh from the shell, chopped and grated, and the coconut cream and milk were made from scratch. Coconut water was liberally spritzed. Frosting was beaten for seven minutes to achieve marshmallow-y fluffiness.



Maybe the cake was a good luck charm. It rained last night, actual rain that soaked the ground. It's nearly 10am and we haven't broken eighty degrees, so I'm hoping to air the house out a little.

Heh. I also read the CakeWrecks RSS feed on my friends page, so I'm used to seeing a lot of cakes... I stared at this one for a long time, trying to figure out how it could possibly be a "wreck" before I realized it wasn't from the feed!

So, you'll hate me for saying this, but I really dislike coconut. However, that cake looks AMAZING! And I want to try some of that frosting.

Man, all my friends seem to not like coconut. How did I never know this?

The frosting came out awesome. It's not super sweet or heavy. It's very cloud like and super easy to make with a hand held mixer. I will post about it.

Aside from the whole dealing with fresh coconut thing, it was pretty easy. And then I sent it to work with Mike so I wouldn't eat the whole thing.
