I am thinking about making a potato fennel soup, since I have all this baby fennel in the crisper drawer. Perhaps I should read up on them and determine if you treat them like green onions or chop up the entire thing or how exactly one prepares fennel.

Over the weekend we ended up eating a lot of food that was heavy or greasy. It left us both feeling kind of unpleasant. The worst, worst, worst part was the fake butter on the waffle though. When I looked at the label and it said "vegan" I should have thrown it away. It was so disgusting one bit caused me to skip breakfast. I can't eat these awful fake butters.

The cats are sharing the cat tree. It's a miracle.

I bought myself a water bottle because maybe, maybe, maybe, I'll be more hydrated that way. Day two and I am still using it.

1. why are you trying to eat the fake, awful butters?
2. fennel shaved makes a great salad with other greens and toasted pine nuts and some blue cheese crumbles.
3. our cats share nothing with the exception of late-night fights that result in occasional blood splatters in the kitchen.

1. There was a "make your own waffle" station at the hotel. They didn't have any regular butter.
2. I love salads with nuts.
3. Kitties are weird.

My favorite way to eat fennel is to halve it, trim it, and oven roast it for a bit with a healthy drizzle of olive oil and some parmesan cheese. Great with roast chicken or fish. But a potato fennel soup, you say? Sounds pretty darn tasty, would love to hear a review if you make it!

I made potato leek soup, a la Julia Child, and added the fennel chopped and diced. It has a delicious comforting feel, and totally decadent with some bacon crumbles.

Was it soy garden? I prefer that to real butter, but I admit I'm weird. Also, Iphy adores it! I mean, to the point that she can be sound asleep, but if I open the container, she comes running.

I don't think so.. I don't remember exactly what it was other than a little yellow tub of greasy evil. I don't think it was something one would find at Whole Foods or anything - just some weird mass market fake butter.
