Jan. 31st, 2004 11:53 pmI made a cake and even got it out of the bundt pan without breaking it. Go me. I love baking.
It's a peppermint angel food cake speckled with chocolate. I was worried when tasting the batter that the peppermint would be too strong, but it tastes quite subtle. Relief!
Cake Mix Doctor recipe, excellent kitchen resource if you don't have the time to bake a cake from complete scratch
1 package angel food cake mix (16oz)
1 1/4 cup water
1/2 teaspoon peppermint extract
1 ounce grated semisweet chocolate
Place rack in center of the oven, and preheat to 325 degrees F. Set aside an ungreased 10" bundt or tube pan.
Blend cake mix, peppermint and water in large mixing bowl. Scrape down sides with a spatula from time to time to make certain all the mix is blended. Batter will look almost foamy, especially if you use an electric mixer. Fold in chocolate with a spatula.
(Tip on the grated chocolate - keep chocolate in the fridge or freezer for at least thirty minutes before grating. Makes it a bit less likely to melt in your hands while grating it.)
Pour batter in the oven, smoothing the top with the spatula. Bake until the cake is light brown and springs back when lightly pressed, about 40 to 45 minutes. Remove pan from oven and turn upside down on a rack to cool for about an hour. Run a knife along the edge of the cake to free it from the pan, and tap the sides to help the cake slide out.
Garnish with chocolate or peppermint ice cream, or with whipped cream. Sprinkle crushed peppermint in the whipped cream if you like.
I'm thinking around 6pm tomorrow for folks to come over. Crap, must call Rachel right now! I am so bad with the phone. Well, that's taken care of now. I've never called anyone so late before, Miss Manners would have my head.
