I love it when the baking and candy making takes an unexpected but satisfying turn. I've created a big pan of chocolate covered marshmallows and another something involving cherries and pecans.

A very merry chocolate candy Christmas!

It was pretty simple for the most part. I picked things I liked, tiny marshmallows and pecans and toffee bits. Then I melted chocolate slowly in the microwave, as I don't have a double boiler. (do for 15-30 seconds at a time on medium power so as not to scorch.) When I had soupy, melty chocolate I would add a little pat of butter just for fun and then mix in the nuts or mints. Then I spreaad it out on parchment paper with a spatula and let it cool.
