late night cake time

Summer baking is best done at night. One of my weird rare pleasures is staying up until a ridiculous hour, baking a cake or a pie. This is a cinnamon cake, layered with cinnamon buttercream frosting and pecan pieces. I'm sending it to work with Mike since his interns for the summer will be leaving soon. I think NI should give me a small stipend as a recruiter.

Date: 2011-08-02 01:29 pm (UTC)Late night baking is a lot of fun. Now I live in a shared house I don't do it too much because it bothers people (my place is a lot smaller than yours!). Last time I remember midnight baking was a yearish ago, before my interview for this job, and I couldn't settle down to read or sleep, so I baked lemon biscuits. They were delicious. And I got the job!

Date: 2011-08-03 11:48 pm (UTC)The plain pecans did, indeed, balance things nicely. Their size and density made it really tricky to cut a small piece, though. Oh, darn.
