late night cake time

Summer baking is best done at night. One of my weird rare pleasures is staying up until a ridiculous hour, baking a cake or a pie. This is a cinnamon cake, layered with cinnamon buttercream frosting and pecan pieces. I'm sending it to work with Mike since his interns for the summer will be leaving soon. I think NI should give me a small stipend as a recruiter.

That looks fabulous.

Late night baking is a lot of fun. Now I live in a shared house I don't do it too much because it bothers people (my place is a lot smaller than yours!). Last time I remember midnight baking was a yearish ago, before my interview for this job, and I couldn't settle down to read or sleep, so I baked lemon biscuits. They were delicious. And I got the job!

Thanks! our house is actually pretty small but I can see how housemates might be an impediment tot he siren call of the kitchen in the middle of the night.

Looks (and sounds) damn tasty.

Are they plain pecan pieces? The only suggestion I would perhaps offer would be to use Austinuts' cinnamon pecans if they wouldn't be taking the cake overboard...

Thanks! The pecans here are plain. I thought about candying them, but since the cake is already cinnamon and the frosting too, I thought plain might serve to balance out the sweetness. I think if I made it with a basic frosting without the added flavor, cinnamon pecans would be a good choice. Or perhaps on a chocolate cake!

The plain pecans did, indeed, balance things nicely. Their size and density made it really tricky to cut a small piece, though. Oh, darn.

Yeah, that is a pickle. I might go for crushed pecans next time, with some bonus halves for decoration about the edge or something.
