Rose Sherbet

3 cups sugar
1 1/4 cups spring water
2 teaspoons fresh lemon juice
1/3 cup rosewater
1/2 teaspoon red food coloring
Iced spring water

1 In a small nonreactive pan, stir the sugar, water and lemon juice together over medium heat, until the sugar dissolves and the syrup is thick enough to coat the back of a spoon, 3 to 5 minutes.

2 Add the rosewater and food coloring and stir well for another 2 to 3 minutes. Pour the syrup into a bottle with a cap and allow to cool to room temperature.

3 To serve, mix the desired amount of syrup with the ice-cold spring water in a pitcher. (Usually about one third syrup to two thirds water, but you should decide for yourself) Serve in tall glasses over ice.

I think this would be something good to have at a tea party. You can make it any shade of pink to red, it looks so lovely in a nice glass. The recipe came from Please to the Table also.

It's raining! Which is what I learned to say in Czech today. I should figure out how to make the accent marks show up here for everyone's amusement. Professor P. is teaching! She promised to teach us a song about rain. I have a feeling my Czech will soon outstrip my Russian and I'll walk around muttering in Czech and forgetting my English...

Mailed packages today. I've never done that before. It was kind of fun. So now I just want to make packages of neat things and mail them to people. Turned in my badge and got a copy of my resume from Svoboda to work on. So that when I quit being apathetic about it I can find another job.

I saw him today and everything became clear. He spent a long time in California and forgot to come back. So everything is okay and we walked in the rain talking about library books. I like being back in class. It just feels right, like I belong in the middle of a university always. Grad school has never looked so attractive as right now.

Onion & Pomegranate Salad

2 large red onions, halved and sliced
Salt
1/4 cup red wine vinegar
1 cup pomegranate seeds
1/4 cup fresh or bottled pomegranate juice
1/3 chopped fresh Italian (flat-leaf) parsley

1 In a colander, toss the onion with 1 teaspoon salt. allow to stand for 20 minutes. Drain thoroughly and pat dry with paper towels.

2 In a salad bowl, combine the onions with the vinegar, pomegranate seeds, pomegranate juice and salt if needed. Cover and refrigerate for 2 to 4 hours. Add the parsley and toss right before serving.

Mmmm food. I love this cookbook. Maybe this weekend I'll convince Jim and Karen to have another dinner party, so I can make something scrumptious. Tomorrow ansat gets to cook dinner for his house. I should buy some potatos to bake, I'm craving potato goodness. I wish I could find sour cherries so I could make cherry dumplings.

My accent is definitely Slovak... sigh. I wish I could figure out how to roll my r's. Reading dialogues all night out loud to myself, trying to adjust my voice into this sound. I stumble over these consonants, it's frustrating. I just want to be able to speak confidently in this language. I want to go to Prague and be able to wander around and understand what people say.

I love my Russian, even though it keeps creeping into my head at inopportune moments. It gets all mixed up in my Czech. Thank goodness I'm not the only one, Tatiana is a native Russian, and Analisa's got it too. We have one native Czech guy in the class. I'm not sure why he is there, as it seems like he knows a lot of the language. What drives me crazy is not that he always has the answer but that he is so humorless and cold in the class. One gets the feeling he looks down on the rest of us when we stumble over sounds and cases.

Tomorrow I'm going to try to figure out what the story is with the Co-op and my textbooks. Maybe do the paper work to change my major to Czech. I want to get some plastic wrap from the store so I can make soaps this week and wrap them up. Must get sleep so I can find my Foreign Policy class tomorrow morning. My bed and my lovely red sheets are calling me....
